  2. Spread the yeast on a piece of bread

  4. Boil the water, honey and sugar
  5. Stand in an earthenware pot
  6. Skim off any scum
  7. Add lemon juice, cloves and ginger
  8. Leave to cool
  9. When just warm, float the bread and yeast on the top
  10. Cover with a clean cloth
  11. Leave for about 6-8 days
  12. 3
  13. Strain and bottle
  14. Corks should be loose to start with
  15. Leave for at least 5-6 months
