How to make a "Mexican Coffee Liqueur"

  2. Heat water in a medium saucepan
  3. When hot, add coffee and stir until dissolved
  4. Add sugar and vanilla bean, stirring well to combine
  5. Bring to boil, stirring constantly
  6. Immediately reduce heat so that a very low boil is maintained for one minute
  7. Remove from heat and cool to lukewarm

  9. Pour vodka and brandy into aging container
  10. Add the cooled coffee mixture and the chocolate extract
  11. Stir well
  12. Cap and let age in a cool dark place for 3 weeks

  14. After initial aging, strain liqueur through a cloth-lined wire-mesh strainer over a large bowl
  15. Repeat until desired clairity is reached
  16. Stir in food coloring
  17. Bottle, cap and let age an additional 1-3 months
